Pat's Paleo Tortatta

Preheat oven to 350
4  eggs scrambled
1tbs of canola or other paleo friendly oil
1/4 small onion
1/2 small bell pepper (green, not those horrendous genetic mutations)
handful of mushroom buttons
1/2 cup of frozen spinach
1 roma tomato cubed
2 tbs sweet basil
A sprinkle of sea salt if you absolutely must.  To me, it's not necessary.

put oil in #8 cast iron skillet. saute onion, bell peppers on medium heat until the onion is clear. Add mushrooms and frozen spinach (defrost before putting it into a hot skillet or you're in for a nasty surprise.

Stir fry all the ingredients, lower heat. Add eggs but do not scramble. when the edges of the eggs dry, remove from heat. Garnish with tomatos and basil. Place in oven and cook about 15 minutes. remove from oven. Serve warm.
Serves 4
