Veggie beef soup

This will be my first attempt at paleo friendly veggie beef soup using canned veggies.
The only reason why Im using the cans is because we don't get paid for another two weeks andddddd so Im having to scrounge.
Canned goods are low in nutritional value and taste too salty or just plain funky. I prefer my veggies fresh and raw.
So here we go: If you've got fresh use them.
1 onion chopped
1 stalk of celery
1 can of unsalted carrots
1 can of diced tomatoes
1 1/2 can of low or non sodium beef broth
1 tbs oregano
pinch of paprika (just cause I like paprika)

saute the celery and onion until tender. Add to pot
add beef broth, carrots and tomatoes. cook on low heat for
about half an hour. Cool and serve.
I'll let you know how it tastes coming from the can as opposed to fresh but Im bracing myself. This is gonna suck.
When I get fresh veggies next month I'll do this again with fresh carrots diced and unseeded tomatoes, leeks and fresh oregano.

  1. I ate most of it, then tossed the rest away. Yeah there was definately a meh factor involved. Too salty (I added NO salt) tasted like the can. I added (yes I know) water crackers to it to help make it palatable. All it did was make it mooshy.
    But it filled a need. Im definately not hungry any more.
    And I have more for tomorrow.
    I'll be SOOO glad when payday comes.

  2. Next time, fresh veggies and real broth, all the way. And maybe some mushrooms too.
